Puri is a delicious and wholesome food product originating from Indian cuisine which is deep-fried to perfection. Puri is often times paired with a vegetable curry to create the dish which is popularly known as puri bhaji. A puri is best enjoyed during breakfast and it can also be eaten as a snack alongside sweet sides such as shrikhand.

Puri is a food product which is similar to roti in terms of ingredients and the method of preparation. Puri is prepared from scratch using wheat atta where the dough is rolled flat and then cut into small circular shapes. The only difference in the preparation of roti and puri is that puri is deep-fried using cow ghee or vegetable oil.

A lot of variations can be created when making a puri by introducing different spices while preparing the puri dough. Spices such as carom seeds, fenugreek seeds, cumin seeds etc. are added to the puri dough to give a flavourful twist to the traditional puri recipe. In this recipe, we are going to give a unique and healthy twist to the traditionally prepared puri by introducing the goodness of spinach into the mix.

The wheat atta used in this recipe will be Aashirvaad Shudh Chakki Atta which is a premium quality wheat atta. The Aashirvaad atta is authentic atta which is made from whole wheat grains without any adulteration. The Aashirvaad atta is created using a 4-Step Advantage Process due to which the atta retains most of its dietary fibres and nutrients.

Preparation of Spinach Puri using Aashirvaad Atta:

  1. Take Aashirvaad Atta in a bowl and then add green chilli paste, ginger garlic paste and spinach puree to it. Then add salt to the atta mix followed by water as per requirement. The water is added to knead the dough properly.
  2. Knead the dough for about 10 minutes till a smooth consistency is obtained. The dough will have a rich and bright green colour due to the spinach puree. Once the dough is prepared, make small round portions out of the dough to roll into a puri.
  3. Use some flour for dusting before rolling the dough portions into a puri so that it doesn’t stick to the surface. Now, roll the small portions of the dough into small symmetrical circles. Take a pan and heat some oil into it.
  4. Once the oil is hot enough, deep fry the puri into it till it becomes crisp and fluffy. Deep fry the puri evenly on both sides using a spatula. Serve the delicious and wholesome puri alongside an appropriate curry. Each serving of spinach puri will deliver the necessary nutrients alongside a wonderful taste in each bite.
